Shoyu, is the original type of ramen that lends its distinct flavor to this particular lighter-style ramen, resulting in a broth that can vary in color from clear-brown to darker and cloudy. I fell in love with this famously delicious Japanese dish whilst I was living in Japan from 2008-2010.
